I celebrated 26 with prosseco, sunshine, and amazing food. The almafi coast trip is postponed for now, but I wasn’t going to postpone celebrating too.
Here are a few things we did to make the day/weekend special while suck at home.

I’m the kinda girl that needs her “me” time. I started the day with a yummy homemade iced vanilla latte (recipe below) and caught up on my fave trash TV show that I haven’t been able to watch since I moved here. I also ate cake for breakfast. Do little things that make your heart happy.
During the celebration weekend I also had a few pamper sessions and caught up on podcasts. A few people are learning how to DIY dip nails, so you can get really creative with this.

I’m addicted to the ‘full Irish breakfast’, so we had that with mimosas. Pro tip – take your drink up a notch and add a garnish. We kept it simple and added a strawberry. If you’re able to, putting together a bloody mary bar would be so fun too!

We went for a walk, which is now just part of the daily routine, but the scenery is so gorgeous here and still new to me. We saw horses, cute dogs, and wideeee open spaces.

My man is the CUTEST THING EVER and had the idea to make homemade macaroons! I love these tasty treats and had never made them before. They aren’t easy to make, so it was a fun activity to do. We also made a chocolate chip cookie cake. Macaroons, sushi, bread…so many things (that take a bit of time) to make! This could easily be a full day activity.

When we would have a date night in, we would sometimes do a game night! We played a few faves of cards, Play Station, and the OG, our Wii. The Wii ended up not liking the converter and his Mom saved the day and borrowed one from the neighbors (how freaking sweet?) We played a few rounds of Mario Kart all while being served mimosas.

Since I usually travel for my birthday, I never have the opportunity to completely control the day (muaha) so I said bring on all the chick flicks and movies my man would never watch. We watched Legally Blonde, Sweet Home Alabama, When Harry Met Sally…I decided I wouldn’t force him into HSM, but maybe eventually.

During the day I made fresh homemade salsa and guac – so so good. My boo thang and his mom found a recipe for “the best” fajitas and OMG let me tell you…I was in heaven. Recipe below y’all!

I FaceTimed with all my fam and BFFS!

Iced Coffee // I also add vanilla to mine! I have used recipes from this site before and am always happy with the results.
Cookie Cake // First time ever making cookie cake…idk how. It was so good and the icing was AMAZING.
Fajitas // I am obsessed with Mexican food, so this meal hit the spot. We also had cilantro lime rice!
Salsa // For homemade salsa/guac I kind of like to throw everything together! For the salsa I use tomatoes, onion, garlic, cilantro, lime juice, sea salt.
Guac // Avocados, onion, cilantro, and lime. I like to keep it simple!

Here are a few drinks on my list to try…
I got a giant bottle of prosseco, adorable cards, and the best gift I’ve ever gotten…I’ll share deets on that later, but any guesses? 🙂 LOTS of happy tears where shed and I thanked the good lord above for all the people in my life. I’m so thankful for what I have and who I have in my life.
